Hi, I like pancakes.
I also miss having light buttermilk pancakes. These taste just like the real thing, light and fluffy.
This particular recipe is a small serving (at only 100 calories with ganache) so if you plan on having it for breakfast, you might want to double it. I like to have multiple things for breakfast, so I like tiny recipes like this so I can use it as a piece to breakfast.
Ingredients:
For pancake batter:
1 tbsp + 2 tsp flour
1 tsp coconut flour
1/8 tsp baking powder
pinch baking soda
1 tbsp + 1/2 tbsp egg beaters
2 1/2 tbsp vanilla yogurt
1 tbsp maple syrup
1 tbsp coconut milk
Optional ganache (choose your flavor!):
I chose both. Because they are both so good, and I love chocolate and vanilla together.
Vanilla;
1/2 tbs greek yogurt
1/8 tsp vanilla extract
1 tsp maple syrup
1 tsp milk
Splenda to thicken and to taste
Chocolate;
1/2 tbsp cocoa powder
1 tbsp water
splenda to thicken and to taste
Instructions:
Combine batter ingredients into a bowl and stir until smooth. If you want the syrup, mix that up in a separate bowl to pour over pancakes when done.. Or just use whatever you like on pancakes on top!
Heat skillet on oven to medium heat and spray with nonstick spray. Pour two 1/4 cup portions of batter onto skillet. Flip pancakes with spatula when batter is bubbling. Continue to flip until done. Pour whatever you'd like over top and enjoy.
Nutritonal info: 91 calories for the batter, yields two medium pancakes.
