I love fruit desserts, always have. I've really been wanting a good cobbler, and tonight, I came up with the perfect thing. I had some blackberries I wanted to use up, and I just bought blueberries, and I wanted to eat those too.. so..
The sweet blackberry and blueberry juices blend together in this sweet mini cobbler.
I'm also sure these would be really good with whipped cream on top, just saying. Oh, yeah, I did that.
Or ice cream.
Specifically Slow-Churned Birthday Cake ice cream. You do not even understand how good this tastes. I feel sorry for anyone that never makes this.
Or granola. Or all three (which might happen next time).
I couldn't stop taking pictures of this little dessert in all it's gloriousness. It was just too good.
Also, the great thing about single serving recipes is you can easily double them, and make two, one for you and another (or eat both - because this recipe is under 100 calories anyways, so you might as well, right?!)
But when the other person is still talking about how good it was a half hour after eating.... I knew I needed to post this. Well, and because we were both scraping our ramekins clean.
You will need a 4oz ramekin dish for this recipe.
Ingredients:
Blackberries (about 4 large)
Blueberries (25g, handful)
1/2 Tbsp light butter, spray butter from the bottle, or applesauce
2 Tbsp splenda,
2 tbsp all purpose flour
2 tbsp coconut milk
1/4 tsp baking powder
1/8 tsp salt
1/8 tsp vanilla extract
Instructions:
Mix ingredients together.
Line the bottom of the ramekin with blackberries, and put the blueberries on top. The fruit should more than cover the bottom of the ramekin dish.
Spoon or pour the mixture evenly over the fruit.
Mix remaining 1 tbsp of splenda with 1 tbsp water and pour over the mixture you just poured on the fruit.
Preheat your oven to 375 and bake for 30 minutes! The fruit should be juicy and bubbling at that point. Pull out of the oven and eat warm or let cool.
Nutritional info: 80-100 calories depending on what you decided to use for the butter part.
